It is much more than the typical dish of the island, an unmistakable signal of the festival: the rabbit all’ischitana. It is the synthesis of an ultramillennial history, of family and collective customs, of the rural identity of the Green Island. Introduced to the island in the Greek Epoch with viticulture, rabbits have been the main source of meat for the population for centuries. And there was no feast that did not culminate in the sharing of the most prized dish. Until it became an indispensable Sunday ritual, surviving the crisis of the peasant economy, recovered and revived in the age of tourism. That’s why the little lagomorph is the star on Rabbit Day of a big collective feast all to be enjoyed in homes, restaurants, and wineries all over the island.
